Add the mashed sweet potatoes to the bowl.

Mix on medium-low speed for about 3 minutes.

Then mix in the oatmeal and corn kernels.

Continue mixing for another 3 minutes or until the oats are completely smooth.

Add butter and honey and mix until well combined.

The mixture should be smooth and have a grainy texture.

Add in the cinnamon and vanilla and mix well.

Spoon into greased muffin cups or tin foil-lined 9×13 inch muffin pan.

Once cooled, store in an airtight container.

Notes If you prefer, you can also make a cinnamon buttercream.

Add 1 tbsp of sugar and cook gently, stirring for another minute, until the dough is smooth.

Add flour and salt, stir for 5 minutes more, then cook for a few more minutes until the mixture is nice and smooth.

Remove from the heat and transfer to a large bowl, covered with a kitchen towel.5.

Add a little flour and mix in with the butter and sugar, whisking constantly.

Add water if needed.6.

Mix in the cinnamon and black pepper.7.

Add more water if necessary, if you want a slightly sweeter apple pie topping.8.

Divide the dough into 8 equal parts and shape each part into a ball with your fingers.

Roll each ball into a thin circle and cut into 4 equal parts, filling the whole pie shell with filling.9.

Cover the pie with a baking sheet and bake for 20-25 minutes, or until the edges are golden brown and the centre is bubbling.

The apple filling can also be baked at this point, and the edges can also brown a bit when it cools.10.

Remove the pie from the oven and cool on a wire rack for about 20 minutes before removing and slicing.
