I was really surprised how easy it was to make, and how it tasted.

I made the recipe for one recipe, and I made it again and again until I had it on hand for my next meal.

This recipe makes about 8 servings, or about 1/2 cup of chicken, which I typically eat with rice.
I added about 1 cup of shredded coconut to the recipe to make it easier on the stomach.
To serve, we serve the Thai Chicken with some Thai Basil sauce and fresh parsley for garnish.
In a bowl, whisk together all the ingredients for Thai chicken: 2 tablespoons oil, like vegetable or canola, 1 tablespoon sugar, 1 teaspoon ground coriander, and 1/4 teaspoon ground cumin.
In another bowl, mix together all of the ingredients: 2 cups chicken broth, 1 cup water, 1/3 cup shredded coconut, salt, and freshly ground black pepper.
In the bowl of a food processor, pulse until all of your ingredients are combined.
(This will take about 2 minutes or so.)
Pour the chicken mixture into a large bowl and add a small amount of water to the chicken broth to make sure it doesn’t stick.
Add a few spoonfuls of the chicken to the bowl, and stir it all together to make a smooth mixture.
Add about 1 1/8 cups of the shredded coconut and about 1 teaspoon of the coconut oil to the wet ingredients.
Add the shredded chicken to all of that and stir until all is well combined.
Once all of this is combined, add in the remaining shredded coconut oil and the remaining chicken broth.
(If the coconut is too wet, add more water.)
Blend it together until the consistency is smooth and creamy.
Place the chicken in a large skillet and cook over medium heat until the chicken is browned and starts to turn golden brown on top.
Drain on paper towels and set aside.
To make the sauce, stir together all ingredients: 1 tablespoon water, salt and freshly cracked black pepper, 1 1.5 cups chicken stock, 1 tablespoons sugar, 2 tablespoons coconut oil, and 3 tablespoons coconut water.
Add in the coconut water and mix for a few minutes.
Add some more coconut oil in and mix it well.
Add salt and pepper to taste.
Add to the dry ingredients and stir to combine.
When all of these ingredients are added, add the shredded shredded coconut mixture to the sauce and stir well to combine and taste.
Serve with rice, green vegetables, or a salad.
