Place the dry ingredients in a large mixing bowl.
Add 1/4 cup (25 grams) milk and whisk to combine.

Add in the remaining 1/2 cup (35 grams) water and beat for about 1 minute.
Slowly add in the dry mix and beat.
The batter should come together very easily.
If the batter is too thick, add an additional 1/3 cup (85 grams) flour and beat it in until just combined.
The dough should be smooth, but not sticky.
Divide the dough into 8 equal pieces.
Bake for 30 minutes at 400°F (200°C) until the tops are golden brown and the center is set.
Cool for at least 30 minutes.
The filling should be a light brown color and a few pieces of chocolate.
If it’s too dark, add a bit more flour.
