How to make waffle batter recipe from scratch with egg salad

The first thing to do when you get your hands on waffle bread is to make it as crispy as you can.
It is a good idea to make the waffle dough a little bit thicker, since the batter will be too warm when you put it in the oven.
Waffle dough also needs to have a good crust, which is the surface of the waffles.
You don’t want the wafers to be too hard and chewy, but they should be soft and crisp enough to hold their shape.
To make your waffle, combine the egg salad, pancetta, tomatoes, bacon and onions in a large bowl.
Make sure to mix them well before you add them to the batter.
Add some lemon juice and salt to taste.
Place the wafer in the bowl of a stand mixer, with the dough hook and paddle attachment.
Let it sit for 15 minutes.
Then take it out and roll out the dough.
Roll it into balls, about 1/2 inch thick.
Keep the ball of dough in the fridge until you are ready to use it.
Heat up a large frying pan or a griddle pan over medium-high heat.
When it is hot, add the egg wash.
Once it has cooled, add a couple tablespoons of the pancetta mixture.
Continue adding pancetta and egg wash until the egg and pancetta are mixed well together.
Add the egg mix and continue mixing.
Cook for about 3 minutes, stirring frequently.
If you want the egg mixture to be more crunchy, add more pancetta.
If it is too hard, add some lemon.
Turn the heat off and continue to cook the batter until it is almost done.
Serve the waffles with some bacon bits, or even cheese and breadcrumbs.
