You can use the same amount of chicken as you normally would to make it spicy.

If you use whole chicken, the chunks should be about the size of a chicken wing.
If using half chicken, cut the wings in half and slice the pieces into small cubes, about the same size as the chicken.
I used about half chicken and half wing and the alfredas turned out to be just about the right size.
