Scalloped Potatoes recipe adapted from The Next Week’s recipe

Scallop potatoes are a staple in many home kitchens, but if you’re looking to make them even healthier and more filling, you might be tempted to skip the griddle.
These crunchy, scallop-like potatoes are made with a little help from potatoes, but they’re also incredibly easy to prepare at home, and they can be made in a variety of ways.
The most common method is to cook the potatoes in a slow cooker, but you can also make them at home in a pressure cooker.
The process isn’t very complicated, and it’s great for making a healthy alternative to the potato griddle, but it requires that you add a few extra ingredients.
Here’s how to make scalloping potatoes at home.
1.
Place potatoes in your slow cooker 2.
Cover and cook on high for 8 hours 3.
Once potatoes are done, remove them from the slow cooker 4.
Pour potatoes into a blender 5.
Blend until smooth 6.
When ready to serve, shred potatoes and serve!
Recipe Notes If you’re using a pressure-cooker, use a food processor to blend the potatoes and then puree the mixture into a smooth and creamy consistency.
You can also add a bit of extra liquid to thin it out a bit.
For a more traditional method, add a pinch of salt to the mixture.
