2 large yellow shrimp (about 4 to 6 pounds) 2 tablespoons olive oil 2 garlic cloves, peeled and minced 3 tablespoons soy sauce 1 teaspoon chili powder 1/4 teaspoon sea salt 1/2 teaspoon pepper 1/8 teaspoon black pepper 1 1/3 cups water 3 cups rice pila (or regular rice) 1 large yellow onion, finely diced 2 medium potatoes, peeled, seeded and cut into 1/1-inch chunks 3 tablespoons chopped cilantro 1/5 cup chopped fresh cilantro, plus more to garnish 4 tablespoons minced fresh ginger 1/16 cup chopped roasted garlic 1 teaspoon sea scallions 1/10 teaspoon ground coriander 1 teaspoon smoked paprika 1/6 teaspoon cayenne pepper 1 teaspoon freshly ground black pepper.
Directions In a large pot, bring the water to a boil.
Add the shrimp, then cover and simmer for 15 minutes.
Remove from the heat and set aside.
In the same pot, whisk together the olive oil, soy sauce, chili powder, sea salt, pepper, black pepper, cayanne pepper and ginger.
Add all of the remaining ingredients to the shrimp.
Place the shrimp in a large bowl and cover with water.
Cover and simmer over medium-low heat for 10-15 minutes, stirring frequently.
The water will start to bubble and the shrimp will release its oil and begin to break down the rice.
The rice will begin to turn a light golden brown, about 10 minutes.
Add a few sprigs of fresh cayennes to the rice and stir to break up the rice mixture.
Serve warm or cold with rice.
Notes You can also add a splash of red wine vinegar to taste.
